Ingredients

Outer Layer

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup peanut (or any other nut) butter
  • 2 tablespoons honey or maple syrup
  • 1 scoop protein or collagen peptides powder
  • 1/2 teaspoon vanilla extract

Creamy Filling

  • 1/2 cup cream cheese
  • 1-2 tablespoons honey or maple syrup (to taste)
  • 1/4 teaspoon vanilla extract

Instructions

Creamy Filling

  • In a bowl, combine the cream cheese, honey and vanilla extract.
    Mix until smooth. Chill in the fridge for about 15 minutes to firm up.

Outer Layer

  • In a medium bowl, mix the oats, almond flour, peanut butter, honey, protein powder and vanilla extract.
    Stir until a dough forms. If it's too sticky, add a bit more almond flour; if too dry, add a spoonful of peanut butter.
    Scoop about 1 tablespoon of the dough and flatten it in your palm.
    Place a small amount, around a teaspoon of the cream filling in the center.
    Wrap the dough around the filling and roll into a ball. Repeat for all dough.
    Refrigerate for 30–60 minutes to set.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
