Servings 1

Ingredients

  • 1/2 cup rolled oats
  • 3/4 cup almond milk (or milk of choice)
  • 2 tablespoons thick Greek-style yoghurt or coconut yoghurt
  • 1 tablespoon chia seeds
  • 1 scoop vanilla or chocolate protein powder
  • 1 tablespoon cocoa powder
  • 1 teaspoon maple syrup or honey (optional)
  • 1/2 teaspoon vanilla extract

Magic Chocolate Shell

  • 2 tablespoons dark chocolate chips
  • 1 teaspoon coconut oil

Toppings Optional

  • Fresh or freeze-dried fruit or berries
  • Nut butter drizzle
  • Cacao nibs

Instructions

  • In a jar or bowl, combine rolled oats, chia seeds, protein powder, almond milk, yoghurt, cocoa powder, maple syrup, and vanilla. Stir well until smooth and fully combined.
Cover and place in the fridge for at least 4 hours or overnight. The oats will thicken and become creamy.

Magic Chocolate Shell

  • Place chocolate chips and coconut oil in small dish and microwave with 10 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
Remove oats from the fridge and add any desired toppings. Pour the melted chocolate mixture over the top in an even layer.
Wait 1–2 minutes for the chocolate to harden into a crackly shell. Grab a spoon, tap through the top, and enjoy!
    Tips for the Best Texture
Use rolled oats, not quick oats, for the creamiest consistency.
If your oats are too thick in the morning, stir in a splash of milk.
Add the chocolate shell right before eating for that signature snap.
    Make It Your Own
One of the joys of overnight oats is how easy they are to customise:
Peanut butter fans: Stir in a spoonful of nut butter before chilling.
High-protein boost: Add extra yoghurt or a second half scoop of protein powder.
Add some crunch – add chopped nuts or hemp seeds to the oat mix.
