Ingredients

  • 1 1/2 cups coconut milk or milk of choice (dairy or plant-based)
  • 3/4 cup thick Greek-style yogurt
  • 1/2 cup fresh orange juice
  • Zest of 1-2 oranges, depending on how orange-y you prefer
  • 1/4 cup chia seeds
  • 1 scoop vanilla protein powder
  • 1-2 tablespoons honey or maple syrup (to taste)
  • 1 teaspoon vanilla extract

Instructions

  • In a bowl or jar, whisk milk, orange juice, orange zest, sweetener and vanilla extract until combined.
    Whisk in chia seeds until evenly distributed.
    Let sit for 5 minutes, then whisk again to prevent clumping.
    Cover and refrigerate for at least 4 hours or overnight until thick.
    Stir in yogurt and protein powder until smooth and creamy.
    Adjust sweetness if needed and serve chilled.

    Top with orange segments, coconut flakes, or chopped nuts
    Layer with extra yogurt for a parfait-style pudding
