This recipe is a delicious combination of three family favorites: peanut butter, oats, and chocolate. They come together in just 20 minutes and are such a fun treat to keep around for an any time snack.

Ingredients
1cuprolled oats
1/2cuppeanut butter
1/2cupdesiccated coconut
1/2cuppeanuts (or any other nuts) chopped
1/4cupcoconut oil, melted
1/4cuphoney or maple syrup
2scoopsprotein or collagen powder
1teaspoonvanilla extract
Chocolate Topping
1cupchocolate chips
1tablespooncoconut oil
flaky salt - optional
Instructions
Line a 12-hole muffin tin with paper liners. Or use a silicon muffin baking pan. Set aside.Mix oats, peanut butter, coconut, peanuts, coconut oil, honey, protein powder and vanilla extract in bowl until well combined. Divide into 12 even balls and press into muffin tin.
Chocolate Topping
Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Spoon the melted chocolate over each peanut butter-oat base, spreading it evenly to cover. Sprinkle with flaky salt if desired.Chill in fridge or freezer for several hours to harden.Store in an airtight container in the fridge for up to 1 week or up to 3 months in freezer.Note: You can make these in a regular sized muffin tin or a mini muffin tin, depending on how big you want your peanut buttercups.
