Nut Butter Stuffed Protein Dates

These healthy candy-like protein stuffed dates are incredible, while being made with a handful of nourishing ingredients. Creamy yogurt filling is stuffed into Medjool dates and then covered in chocolate. When frozen, the dates become caramel-like and are absolute heaven! Think, natures Snickers Bar!

Ingredients

  • 12 Medjool dates
  • 1/2 cup nut butter (I used almond butter, but you could also use peanut butter, cashew butter, tahini (sesame seed paste) or coconut butter)
  • 1/4 cup thick Greek-style yogurt, plain or vanilla
  • 1 scoop protein or collagen peptides powder

Chocolate Coating

  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil
  • 1/2 cup roasted, salted peanuts, chopped

Instructions

  • If your nut butter is firm, microwave it for 7-15 seconds until it runs more smoothly. Add the protein powder and stir until evenly combined.
    Cut the dates open and remove pit (if you have already pitted dates, you can skip this step).
    Fill each date with a teaspoon or so of the filling.  
    Melt the chocolate next for the coating.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once the chocolate is melted, you can either dip the date completely or dip half. I like to dip half because I think it’s the perfect balance of flavors.
    Or you can simple drizzle the melted chocolate over the dates with a spoon.
    Sprinkle the chopped peanuts on top of the dates and sprinkle with flaky salt if desired.
    Place in the fridge for at least 30 minutes for the chocolate to set before serving.
    Store in fridge for up to 1 week or freezer for up to 3 months.
    Note: The longer they are in the freezer, the more caramel-like the dates become. They get super gooey!)
