Nut Butter Protein Snack Balls

Ingredients

  • 1/2 cup nut (peanut, cashew, almond or any seed) butter
  • 1/2 cup almond flour (almonds blended to a flour)
  • 1/2 cup dates, soaked 30 minutes, drained, chopped
  • 1/4 cup protein or collagen peptides powder, plain or vanilla
  • 1 teaspoon vanilla extract

Chocolate Drizzle

  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil
  • 1/4 cup peanut butter for drizzle
  • Flaky salt

Instructions

  • In a medium mixing bowl, combine nut butter, almond flour, dates, protein powder, and vanilla extract until well combined and dough-like. If mixture seems too thick add a little water, a tablespoon at a time until the dough comes together. If too wet add a little more almond flour or protein powder.
    Roll into 10-12 balls and place in the freezer for 30 minutes to firm up while you melt the chocolate drizzle.

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, drizzle over balls with a spoon or Ziplok bag with the corner snipped off.
    Drizzle with extra peanut butter and sprinkle with flaky salt if desired, then chill until chocolate has set.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
