Nut Butter & Banana Energy Bites

These no-bake bites are perfect for a protein boost and a sweet treat.
Wholesome chewy oats, almond flour, peanut butter, banana and a couple of other ingredients rolled together into bite sized balls or cups to create an easy but delicious snack.

Ingredients

  • 1 banana, mashed
  • 1/2 cup desiccated coconut
  • 1/2 cup almond flour
  • 1/4 cup rolled oats
  • 1/4 cup peanut (or any nut or seed) butter
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract 

Toppings Optional

  • Drizzle of Coconut Caramel Sauce – recipe below in notes
  • Sliced banana
  • Chopped nuts
  • Chocolate chips or shaved chocolate

Instructions

  • You can either shape the mixture into snack balls or place into a paper lined 12-hole muffin pan or silicon muffin cups to create the cup shape as per the image for this recipe.  
    In a bowl, mix the mashed banana, coconut, almond flour, oats, peanut butter, honey and vanilla extract until well combined.
    Roll the mixture into 10-12 small balls (about 1 inch in diameter) and if you wish to create a individual cup shape place each ball in a muffin cup and spread out evenly with the back of a spoon.
    Refrigerate for about 30 minutes to set before enjoying topped with coconut caramel sauce – recipe below in notes and/or sliced banana and chopped nuts.
    Store up to 1 week in the fridge or up to 3 months in the freezer. Let sit for 15 or so minutes if frozen to allow them to soften before eating.
