Ingredients

Cookie Cake Base

  • 1 cup oat flour
  • 3/4 cup almond flour
  • 1 scoop vanilla protein powder
  • 1/4 cup almond butter or cashew butter
  • 1/4 cup maple syrup or honey
  • 2-4 tablespoons milk of choice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 3 tablespoons sprinkles

Protein Frosting

  • 3/4 cup thick Greek yogurt
  • 1/2 scoop vanilla protein powder
  • 1 teaspoon maple syrup or honey
  • Extra sprinkles for decorating

Instructions

  • Line a small round cake tin, pie dish, or container with baking paper.
    In a mixing bowl, combine oat flour, almond flour and protein powder.
    Add almond butter, maple syrup, vanilla, almond extract, and milk.
    Stir until a thick cookie dough forms.
    Fold in the sprinkles.
    Press the mixture evenly into the prepared pan.
    Place in the refrigerator for 30 minutes to firm up.

Protein Frosting

  • Mix together the frosting ingredients until smooth and creamy.
    Spread the frosting evenly over the chilled cookie cake.
    Top with extra sprinkles.
    Chill for another 30 minutes before slicing and serving.
    Store covered in the refrigerator for up to 5 days or freeze for up to 1 month.
