Mint Chocolate Protein Bites

Mint chocolate protein balls to enjoy as a healthy snack or sweet treat! They are filled with cashews, coconut, your favorite protein powder along with a dash of peppermint. There is nothing not to love with this recipe.

Ingredients

  • 1 cup cashews, soaked 3+hours and drained
  • 1/2 cup desiccated coconut
  • 2 scoops protein or collagen powder
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon peppermint extract (or to taste)
  • 2-3 tablespoons any milk
  • Few drops natural green food colour or make your own – cook tender, greens (such as spinach) in a tiny bit of water for about a minute. A few drops of the juice will give a very concentrated green 

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Toppings Optional

  • Chocolate chips
  • Chopped nuts
  • Coconut shreds

Instructions

  • Combine cashews, coconut, protein powder, honey, peppermint extract  and green food colouring in a food processor.
    Blend until smooth, adding milk a tablespoon at a time for a dough-like consistency.
    Roll into 12-14, 1-2 tablespoon balls (or your preferred size) and place on a parchment-lined baking sheet.
    Freeze for 30 minutes while you melt the chocolate.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted use two forks to hold each bite and one by one, dip into the melted chocolate, then place back on the parchment lined tray.
    Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl.
    Top with your choice of toppings.
    Refrigerate for 15-30 minutes until firm.
