Instructions
In a food processor, process almond flour, dates, oat flour, cashew butter, protein powder, 2 tablespoons milk, vanilla and peppermint extract until smooth and mixture has formed a ball inside the bowl of the processor. If the dough seems a little dry, add more milk a tablespoon at a time until the mixture comes together. You want it to stick together when pinched between your fingers.Form into 12 (or more smaller ones) balls and place on a plate. Put plate in the freezer while you complete the next steps.
Mint Chocolate Coating
Place the chocolate chips and coconut oil to a small microwave-safe bowl and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and coconut oil together.Once melted, drizzle over the balls with a spoon. Or pour the melted chocolate into a zip-top plastic bag or pastry bag. Cut a small corner off of the bag and drizzle over each ball. Place in refrigerator for 30 minutes, until chocolate is set. Will keep at room temperature for up to 1 week, but to keep them firm and fresh, store in the fridge before and after serving. Great in freezer for up to 3 months.
