Mint Chocolate Protein Balls

These mint chocolate protein balls are a healthy treat.  Each bite is filled with soft notes of peppermint, dark chocolate, and a hint of coconut. Made with dates and almond flour, these no-bake balls come together quickly and freeze wonderfully, too!

Ingredients

  • 1 cup almond flour
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup oat flour (oats blended to a flour)
  • 1/4 cup cashew butter
  • 2 tablespoons cocoa powder
  • 2 scoops protein or collagen peptides powder
  • 2-4 tablespoons any milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract

Mint Chocolate Drizzle

  • 1/2 cup white chocolate chips
  • 1 teaspoon coconut oil
  • 1/4 teaspoon peppermint extract
  • Green food colouring - For a vibrant green colour add a few drops natural green food colour or make your own – cook tender, greens (such as spinach) in a tiny bit of water for about a minute. A few drops of the juice will give a very concentrated green.

Instructions

  • In a food processor,process almond flour, dates, oat flour, cashew butter, protein powder, 2 tablespoons milk, vanilla and peppermint extract until smooth and mixture has formed a ball inside the bowl of the processor.
    If the dough seems a little dry, add more milk a tablespoon at a time until the mixture comes together. You want it to stick together when pinched between your fingers.
    Form into 12 (or more smaller ones) balls and place on a plate. Put plate in the freezer while you complete the next steps.

Mint Chocolate Coating

  • Place the chocolate chips and coconut oil to a small microwave-safe bowl and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and coconut oil together.
    Once melted, drizzle over the balls with a spoon. Or pour the melted chocolate into a zip-top plastic bag or pastry bag. Cut a small corner off of the bag and drizzle over each ball. Place in refrigerator for 30 minutes, until chocolate is set.
    Will keep at room temperature for up to 1 week, but to keep them firm and fresh, store in the fridge before and after serving.
    Great in freezer for up to 3 months.
