1ripe banana
1cupdates
1/2cupalmond flour or oat flour
1/2cupchocolate or vanilla protein powder
2tablespoonscocoa or cacao powder
1tablespoonalmond butter or peanut butter
1/2teaspoonvanilla extract
2-3tablespoonsmilk of choice (if needed)
Pinch of sea salt

Instructions
If your dates are hard, soak in hot water for 10 minutes and drain.Add banana and dates to a food processor. Blend until smooth and sticky.Add almond flour, protein powder, cocoa powder, almond butter, vanilla, and salt. Blend again until a thick dough forms.If the mixture is too thick, add milk 1 tablespoon at a time until it becomes soft and workable.Scoop 8-10 small portions (more or less) and roll into balls, then gently flatten into mini cookie shapes.Add toppings (optional)Press chocolate chips, chopped nuts or cacao nibs into the tops.Place in the fridge for 30–45 minutes or freezer for 15–20 minutes until firm.Store in the fridge for up to 1 week or freezer for up to 3 months.Best enjoyed slightly chilled for a fudgy texture.Easy Variations:Double Chocolate: Add extra cocoa and chocolate chipsPeanut Butter Chocolate: Increase nut butter for a richer flavourChocolate Orange: Add a little orange zestMocha: Add ½ teaspoon instant coffee
