Mini Chocolate Coconut Bites

These no bake chocolate coconut bites area family favorite! They need just a few simple ingredients to make and are full of rich, coconut flavor.

Ingredients

Base Crust

  • 1 cup dried figs (or dates or sultanas)
  • 1/2 cup almonds
  • 1/2 cup desiccated coconut
  • 1/2 cup rolled oats
  • 1/3 cup peanut butter

Chocolate Topping

  • 1 cup chocolate chips, white or dark
  • 1 tablespoon coconut oil
  • 2-3 tablespoons desiccated coconut

Instructions

Base Crust

  • Place paper liners in a mini 24-hole muffin tray or use a silicon muffin pan.
    Cut the stalk from the figs and add to a food processor with about 3 tablespoons of water. Blend until sticky. Add the other base ingredients. Blend until well combined.
    Divide into 24 balls and place one in each of the mini muffin cups. Even out with the back of a spoon. Put in the fridge whilst you melt the chocolate.

Chocolate Topping

  • Place chocolate chips and coconut oil in a small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, pour a spoonful on top of each bite and sprinkle over some extra desiccated coconut. Refrigerate again.
    They will last for up to 1 week in the fridge or up to 3 months in the freezer.
