Mermaid Blue Spirulina Smoothie Bowl

This Protein Bowl recipe is a creamy and smooth anti-oxidant ‘meal-in-a-bowl’ that features spirulina, an incredible superfood with amazing health properties. Sweet. refreshing, and so easy to make! Combine blue spirulina powder, bananas, almond milk and your fave protein powder to create a healthy breakfast.

Ingredients

  • 1 banana, sliced, frozen
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1/2 cup blueberries, frozen
  • 1/2 cup blackberries, frozen
  • 2 scoops protein or collagen peptides powder
  • 2 teaspoons blue spirulina powder
  • 3 dates

Toppings Optional

  • Coconut, shredded
  • Fresh fruit or berries
  • Hemp or chia seeds
  • Dollop of whipped coconut cream – recipe below in notes

Instructions

  • Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.
    When ready to make the smoothie bowl, open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.
    Place frozen banana, coconut cream, blueberries, blackberries, protein powder, blue spirulina powder and dates in blender.  Blend until smooth and creamy. Add a little milk (or coconut water) a tablespoon at a time if needed to get things moving (less liquid will result in a thicker smoothie bowl).
    Pour into a bowl and add desired toppings and serve immediately.

    Nuts or nut butter are a great source of healthy fats. Seeds are full of fiber and contain many important vitamins, minerals and antioxidants.
