Ingredients
Base Crust
1 cuprolled oats
1/2cupalmond flour
1/2cupdesiccated coconut
3tablespoonscoconut oil, melted
2tablespoonsmaple syrup or honey
Lime Avocado Protein Layer
2mediumripe avocados, pitted and peeled
2scoopsvanilla or unflavoured protein powder
1/4cupfresh lime juice (about 2 limes)
Zest of 1 lime
3-4tablespoonsmaple syrup or honey (to taste)
1/4cupmilk of choice
1teaspoonvanilla extract
Pinch of salt
ToppingsĀ Optional
Toasted coconut flakes
Lime zest
Chopped nuts
White chocolate drizzle

Base Crust
Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a bowl, mix all base ingredients until well combined. Press into the prepared dish and smooth the top.
Lime Avocado Protein Layer
Add all lime avocado layer ingredients to a blender or food processor. Blend unti smooth and creamy.Pour the avocado mixture over the base and smooth evenly.Refrigerate for at least 3ā4 hours, or until fully set.Slice into 8-10 bars or more smaller squares to serve.Store in an airtight container in the fridge for up to 3 daysFreeze for up to 1 month (thaw slightly before serving).
