Lime Avocado Protein Bars (No Bake)

Ingredients

Base Crust

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup desiccated coconut
  • 3 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup or honey

Lime Avocado Protein Layer

  • 2 medium ripe avocados, pitted and peeled
  • 2 scoops vanilla or unflavoured protein powder
  • 1/4 cup fresh lime juice (about 2 limes)
  • Zest of 1 lime
  • 3-4 tablespoons maple syrup or honey (to taste)
  • 1/4 cup milk of choice
  • 1 teaspoon vanilla extract
  • Pinch of salt

ToppingsĀ Optional

  • Toasted coconut flakes
  • Lime zest
  • Chopped nuts
  • White chocolate drizzle

Instructions

Base Crust

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a bowl, mix all base ingredients until well combined. Press into the prepared dish and smooth the top.

Lime Avocado Protein Layer

  • Add all lime avocado layer ingredients to a blender or food processor. Blend unti smooth and creamy.
    Pour the avocado mixture over the base and smooth evenly.
    Refrigerate for at least 3–4 hours, or until fully set.
    Slice into 8-10 bars or more smaller squares to serve.
    Store in an airtight container in the fridge for up to 3 days
    Freeze for up to 1 month (thaw slightly before serving).
