An absolutely delightful Lemon-y healthy pudding – made sugar free and bursting with bright flavor! Chia and oat pudding is a delicious breakfast or snack. Add toppings for extra healthy fats and texture!
In a medium bowl, mix coconut milk, oats, lemon juice, zest, honey, protein powder and turmeric until well combined.Add chia seeds and mix to combine evenly. Let sit 20 minutes, stirring every 5 minutes, until thick.Taste and adjust sweetness. Add more honey if you would like it sweeter or more lemon if you want a more lemony flavor. Chill in the refrigerator(overnight for best results). If you are in a hurry you can eat it after 30minutes but it won’t be as thick.Serve garnished with lemon zest and any optional garnishes you like .Store in a sealed jar in the refrigerator for up to 5 days. It will get thicker as it sits, if necessary thin it out with a little more coconut milk.
