Lemon Protein Cheesecake Fluff: Light, Creamy & Guilt-Free

Ingredients

  • 1 cup thick Greek-style yogurt or blended cottage cheese
  • 1/2 cup cream cheese, softened (leave out at room temperature for an hour or give it a 10 second burst in the microwave)
  • 1 scoop vanilla protein powder
  • 2-3 tablespoons honey or maple syrup (to taste)
  • 1 lemon, juice and zest
  • Optional: ¼ cup whipped yogurt or whipped coconut cream (homemade recipe below in notes) for extra fluff, a lighter texture and another level of nutrition.

Toppings Optional

  • Dollop of whipped coconut cream - recipe link below in notes
  • Fresh fruit or berries
  • Chopped nuts
  • Chocolate shavings
  • Drizzle of nut butter

Instructions

  • Add Greek yogurt (or cottage cheese), cream cheese, protein powder, honey, lemon juice and zest to a bowl or blender.
    Blend or beat until completely smooth and creamy.
    If using, gently fold in whipped yogurt or whipped coconut cream for a lighter texture.
    Chill for 30 minutes for best flavour and consistency.
    Scoop into 2 bowls to serve immediately or store covered in the fridge for up to 3 days.
