Ingredients

  • 2 cups thick Greek yogurt (or dairy-free yogurt)
  • 1 scoop vanilla protein powder
  • 1-2 tablespoon honey or maple syrup (to taste)
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 cup pineapple, finely chopped

Optional Toppings

  • Shredded coconut
  • Sliced kiwi or mango
  • Granola
  • Hemp or chia seeds
  • White chocolate drizzle

Instructions

  • Line a baking tray with baking paper.
    In a bowl, mix yogurt, protein powder, sweetener, lemon juice, and lemon zest until smooth.
    Spread the mixture evenly onto the tray, about ½-inch thick.
    Scatter chopped pineapple and any optional toppings over the surface.
    Freeze for 3–4 hours, or until fully firm.
    Break into pieces and store in an airtight container in the freezer.
    Keep frozen for up to 2 weeks. Let sit for 1–2 minutes before eating for best texture.
