Lemon Ginger Chia Wellness Cubes

Ingredients

  • 2 cups almond milk (or any preferred milk) or apple juice
  • 1 cup chia seeds
  • 1/2 cup honey or maple syrup
  • Zest of 2 lemons
  • 1/4 cup fresh lemon juice
  • 1 tablespoon fresh ginger, grated
  • 1 pinch cayenne pepper
  • pinch sea salt

Instructions

  • In a medium mixing bowl, combine the chia seeds and almond milk. Stir well to ensure the chia seeds are evenly distributed.
    Add the honey or maple syrup to the mixture, stirring until fully incorporated.
    Add the lemon zest, fresh lemon juice, grated ginger and a pinch of salt to the bowl. Mix thoroughly to combine all ingredients.
    Let the mixture sit for about 10 minutes, stirring occasionally to prevent the chia seeds from clumping together.
    After the mixture has thickened slightly, pour it into ice cube trays or silicone molds, filling each compartment evenly.
    Cover the trays with plastic wrap or a lid and placethem in the refrigerator.
    Allow the chia cubes to chill for at least 4 hours oruntil they are fully set.
    Once set, carefully remove the cubes from the trays and store them in an airtight container in the refrigerator.
