Lemon Ginger Cheesecake Protein Balls

Ingredients

  • 3/4 cup cream cheese
  • 1/2 cup almond flour
  • 1/4 cup coconut oil
  • 2 tablespoons honey or maple syrup
  • 1 scoop protein or collagen peptides powder
  • 1 lemon, juice and zest
  • 1/2 teaspoon ground ginger

Coating

  • 1 cup desiccated coconut

Instructions

  • Allow the cream cheese and coconut oil to sit at room temperature to soften. Or place in a bowl and microwave for 10 seconds to soften.
    Add almond flour, honey, protein powder, lemon juice and zest, and ginger and mix until a thick dough forms.
    Refrigerate for 10 minutes in the freezer to firm the dough up.
    Place desiccated coconut in a shallow plate. Remove the dough from the freezer. Form into 10-12 or more golf-sized balls with the dough and roll in the desiccated coconut.
    Arrange on a dish or baking sheet lined with parchment paper and place in fridge for 30 minutes to further firm up.
    Enjoy your lemon ginger cheesecake snack balls immediately (not all at once!) or store in the fridge for up to 1 week or freezer for up to 3 months.
