Ingredients

  • 1 cup rolled oats
  • 1/2 cup desiccated coconut
  • 1 scoop protein or collagen peptides powder, plain or vanilla
  • 2 tablespoons almond or cashew butter
  • 2 tablespoons honey or maple syrup
  • 1 lemon, juice and zest
  • 1 teaspoon vanilla extract
  • 1/4 cup desiccated coconut for rolling balls in

Instructions

  • Add all ingredients to a mixing bowl and mix until the mixture comes together into a sticky, uniform dough.
    Using your hands, roll the mixture into 10 (more or less depending on your preferred size) balls. Roll in coconut to coat and place balls on a tray and refrigerate for at least 20 minutes to firm up.
    Transfer to an airtight container and keep refrigerated for up to 7 days or freezer for up to 3 months.
