Ingredients

Crumble Base

  • 1 cup rolled oats
  • 1/2 cup almonds or cashews
  • 2 tablespoons maple syrup or honey
  • 1 tablespoon coconut oil, melted
  • Pinch of sea salt

Lemon Cheesecake Filling

  • 1 cup Greek yogurt
  • 1/2 cup cream cheese, softened (leave out at room temperature for an hour or so or give it a couple of burst in the microwave).
  • 1 scoop vanilla protein powder
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1-2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract

Optional Toppings

  • Dollop of yogurt
  • Extra lemon zest
  • Fresh berries
  • Crushed nuts
  • Coconut flakes

Instructions

  • Add oats and nuts to a food processor and pulse until crumbly.
    Transfer to a bowl and stir in maple syrup, melted coconut oil and sea salt.
    In a separate bowl, beat cream cheese until smooth.
    Add Greek yogurt, protein powder, lemon juice, lemon zest, maple syrup and vanilla.
    Mix until smooth and creamy.
    Divide half the crumble mixture between four serving glasses or jars.
    Add a layer of lemon cheesecake filling.
    Chill for at least 30 minutes before serving.
    Garnish with lemon zest or berries if desired.

    Toast the oats and nuts lightly if you would like extra crunch and depth of flavor.
    Use cashews for a softer crumble or almonds for more crunch.

    Add extra lemon zest for a stronger citrus flavor.
