Lemon Cheesecake Protein Bites

These lemon cheesecake protein bites are my go-to snack whenever I am looking for an instant boost of energy or even when I just want to treat myself and my loved ones with a sweet and zesty dessert made healthy.

Ingredients

  • 1/2 cup coconut flour
  • 1/2 cup cream, cheese
  • 1/4 cup protein or collagen powder – unflavoured or vanilla
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons honey or maple syrup
  • 1-2 lemons juice and zest – depending on how lemon-y you prefer 

Chocolate Coating

  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Mix the protein powder, coconut flour, lemon zest together in a small bowl.
    Add the cream cheese, coconut oil and lemon juice and continue to mix until all ingredients are combined.
    Roll the batter into 12-14 tablespoon sized balls and place on a parchment lined tray. Place in the freezer for 30 minutes to set.

Chocolate Coating

  • Place chocolate chips and coconut oil in medium dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the bites from the freezer and after checking they are firm and set, skewer each bite and roll in the melted chocolate or use a fork to hold each bite and spoon over the melted chocolate then place back on the parchment lined tray.
    If you have chocolate left over simply drizzle it over the bites or dip twice for extra coating.
    Top with extra lemon zest and place bites back into the freezer for 1-2 hours.
    Store up to 1 week in fridge or up to 3 months in freezer. If frozen, remove from freezer for 10 minutes before eating to allow them to soften.
