Instant Strawberry Cashew Protein Ice Cream

The best things in life are simple and this instant strawberry cashew ice cream with just 4 ingredients is a perfect example. No churning or waiting is required, just a minute of blending and you will have frozen and thick natural ice cream.

Ingredients

  • 2 cups strawberries, frozen
  • 1 small banana, sliced frozen
  • 1/2 cup Greek-style yogurt – plain or vanilla
  • 1/2 cup cottage cheese full fat
  • 1/2 cup dates, soaked 30 minutes and drained
  • 1/4 cup protein or collagen peptides powder
  • 1/2 cup cashews, roughly chopped
  • 1 teaspoon vanilla extract

Instructions

  • Add the banana, yogurt, cottage cheese, dates, protein powder and vanilla extract to a food processor and process until smooth and creamy.
    Add strawberries and cashews and pulse a few times to chop and combine. You want some chunks left for pops of colour and flavour.
    You can serve the ice cream right away as soft serve or pour the mixture into a freezer safe container and place in freezer to further firm up and set. 
    It will take about 2-4 hours to freeze completely. Once frozen, remove the ice cream from the freezer and let sit at room temperature for 10-20 minutes to thaw slightly before serving.
    If you don’t freeze as long/completely or you would like soft serve you could scoop and serve right away.
