Ingredients

Base Crust

  • 1/2 cup oat or almond flour
  • 1/4 cup protein or collagen peptides powder
  • 2 tablespoons peanut butter
  • 2 tablespoons honey or maple syrup
  • 2-3 tablespoons almond (or any other) milk
  • 1 teaspoon vanilla extract

Peanut Butter Filling

  • 1/2 cup peanuts
  • 1/2 cup peanut butter
  • 1 tablespoon coconut oil
  • 1 tablespoon honey or maple syrup

Chocolate Topping

  • 3/4 cup chocolate chips
  • 2 teaspoons coconut oil

Instructions

Base Crust

  • In a mixing bowl, combine the oat flour, peanut butter, honey, almond milk, and vanilla extract. mix everything until it forms a dough-like consistency.
    Once the base is ready, press it into 9-10 silicone ice cube molds, ensuring it’s evenly spread. Place it in the freezer while you prepare the filling.

Peanut Butter Filling

  • Place the peanuts over the base mix evenly distributing them between the ice cube molds.
    Mix peanut butter, coconut oil and honey together. Stir until the mixture is smooth and well combined.
    Pour the peanut butter mixture over the peanuts, covering them completely.
    Place the silicone ice cube mold in the freezer and let it set for at least 30 minutes.
    Next melt the chocolate topping.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted add on top of the peanuts and place back in the freezer for a few hours to set.
    Once the filling has set, carefully pop the bites out of the silicone mold.
    Store in the freezer in an airtight container and thaw a bit before eating!
