Ingredients
Date Caramel
1 1/2cupsdates, soaked 30 minutes and drained
1/4cupprotein or collagen peptides powder
1/4cupalmond (or any other nut or seed) butter
1tablespooncoconut oil, melted
1teaspoonvanilla extract
Chocolate Coating
1cupchocolate chips
1tablespooncoconut oil
Flaky salt
Instructions
Date Caramel
Place all caramel ingredients into a food processor and process until a smooth sticky mixture forms.. Spoon the mixture into ice cube moulds or a 7 x 5-inch loaf pan lined with parchment paper.Freeze for two hours or until solid.
Chocolate Coating
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Remove the date caramels and after checking they are firm and set, pop out of ice cube trays or remove from loaf pan and cut into 12 or more smaller squares.Working quickly, using two forks, dip one caramel at a time into the bowl of melted chocolate until it is fully coated. Lift it from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining caramels.Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. Sprinkle with flaky salt if desired, then chill until chocolate has set.Store in fridge for up to 1 week or freezer for up to 3 months.
