Ice Cube Cookie Dough Protein Bites

These no bake cookie dough bites are made of protein-rich edible cookie dough and created in an ice cube tray. Topped with a soft chocolate ganache. Ready in 30 minutes, this recipe is easy to make, safe to eat, dairy free, and gluten free!

Ingredients

  • 1 cup almond flour
  • 1/4 cup protein or collagen peptides powder, vanilla or unflavoured
  • 3 tablespoons almond butter
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons mini chocolate chips
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil
  • 2 tablespoons any milk

Instructions

  • Add almond flour, protein powder, almond butter, honey, vanilla into a small bowl.
    Mix all ingredients into a dough and fold in chocolate chips. If too sticky, add almond flour; if too dry add milk, a tablespoon at a time until the mixture reaches the right consistency and comes together in a dough like batter.
    Press about 1 tablespoon of the dough into each of 12 wells of an ice cube tray.
    Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Add in the milk and stir.
    Spoon on top of bites dividing the chocolate ganache up between the 12 bites.
    Freeze filled trays for 30 minutes or until you can remove them from the ice cube trays.
    Store in fridge for up to 2 weeks or in freezer for up to 3 months.
