Ingredients

  • 2 ripe avocados, pitted, peeled
  • 2 scoops vanilla or unflavoured protein powder
  • 1/2 cup coconut milk or milk of choice (dairy or plant-based)
  • 1/4 cup fresh lime juice (about 2 limes)
  • Zest of 1 lime
  • 2-4 tablespoon honey or maple syrup (to taste)
  • 1 teaspoon vanilla extract
  • Pinch sea salt

Toppings Optional

  • Toasted coconut flakes
  • Fresh berries
  • Crushed nuts
  • Lime zest

Instructions

  • Add all ingredients to a high-speed blender or food processor.
    Blend until completely smooth and creamy, scraping down the sides as needed.
    Adjust sweetness or thickness by adding more sweetener or a splash of milk if desired.
    Scoop into 4 mason jars or bowls and either serve immediately or refrigerate for 30–60 minutes to allow flavours to develop.
     Store in an airtight container in the fridge for up to 2 days.
    Best enjoyed fresh for optimal colour and flavour.
