Healthy Lemon Ice Cream (Creamy, Refreshing & Protein-Rich)

This tangy and refreshing Lemon Protein Ice Cream tastes far more indulgent than it actually is. Its been lightened it up and made higher in protein by using Greek yogurt and NO pudding mix needed. It's sweet and tart, super creamy, and so easy to whip up. You are going to want to have a few pints of this stashed in your freezer. 🍦 🍋

Ingredients

  • 1 1/2 cups thick Greek-style yogurt (or coconut yogurt for dairy-free)
  • 1 scoop vanilla or lemon-flavoured protein powder
  • 1/4 cup coconut milk or milk of choice (as needed for blending)
  • 2-3 tablespoons honey or maple syrup (to taste)
  • 1-2 lemons, juice and zest - depending on how lemony you prefer

Toppings Optional

  • Fresh fruit or berries
  • Crushed nuts
  • Coconut flakes

Instructions

  • Add all ingredients to a food processor or high-speed blender.
    Blend until smooth and creamy, scraping down the sides as needed.
    Taste and adjust sweetness or lemon flavour if desired.
    Pour mixture into a freezer-safe container.
    Freeze for 2–3 hours, stirring once halfway through for a creamier texture.
    Scoop into two bowls, add your fave toppings and enjoy.
    Store in the freezer for up to 2 weeks.
    Let sit at room temperature for 5 minutes before scooping.
