Healthy Chocolate Protein Bars

No bake chocolate protein bars are a quick, easy, and healthy snack! They are vegan, gluten-free, grain-free, refined sugar-free, and easily customizable for keto and paleo diets.

Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup chocolate protein powder
  • 1/2 cup peanut or almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup cocoa powder
  • 1/2 cup milk of choice
  • 1/4 cup chocolate chips (optional)

Instructions

  • Line a 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a large mixing bowl, combine the rolled oats, chocolate protein powder, and cocoa powder. Add the peanut butter and honey, mixing until the ingredients start to form a dough.
    Gradually add the milk, mixing until you get a thick, cohesive mixture. Fold in the chocolate chips if using.
    Press the mixture into the lined pan, spreading it out evenly.
    Refrigerate for about 1 hour or until firm.
    Cut into 12 bars or more smaller squares and store in an airtight container in the fridge.
