Healthy Berries & Cream Protein Fudge

Luxuriously smooth sugar-free vanilla cream fudge with fresh strawberries! The perfect anytime snack or treat. Protein-rich with just 6 simple ingredients and 10 minutes!

Ingredients

  • 1/2 cup cup coconut butter, store bought or homemade recipe below in notes
  • 1/4 cup coconut or almond (or any) milk
  • 2 tablespoons honey or maple syrup or to taste
  • 1 scoop protein or collagen peptides powder
  • 1 teaspoon vanilla extract
  • 3 large strawberries - sliced into thirds

Instructions

  • Line a 7 x 5-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or use a silicon mold or baking pan.
    Melt jar of coconut butter by placing the jar in a bowl of hot water. *Important* Stir to incorporate oil that separates.
    Pour coconut butter into a small glass measuring cup. Stir in milk, honey and vanilla extract. Taste test and add more honey or vanilla if you think it needs it.
    Transfer mixture to lined pan and spread smooth with a spatula or back of a spoon.
    Cover fudge with strawberry slices. Press in gently. Mixture will thicken as it cools.
    Chill for about 30 minutes until firm. Slice into 9 pieces or more smaller squares.
    To store: Keep refrigerated for up to 1 week. Freezing not recommended since berries will get mushy when thawed.
