Healthier Date Protein Caramels

Ingredients

Caramel Center

  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup almond butter or other nut/seed butter
  • 1/2 cup almond flour
  • 1/4 cup full-fat canned coconut milk
  • 1/4 cup protein or collagen peptides powder
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • Flaky salt

Instructions

Caramel Center

  • Add the dates, almond butter, almond flour, milk, protein powder and vanilla extract to a food processor and process until a ball forms.
    Place the mixture on a piece of parchment paper and top with another sheet of parchment paper, using your hand or a spatula to press on top of the paper and make an even square. Use a knife (wet with water if sticking) to help shape it into a square if needed It should be about a 1/2 inch thick.
    OR, you can roll them into balls or use a silicon candy mold.
    Freeze for 30 minutes.
    Cut into small even squares. Place back into the freezer until ready to coat in chocolate.  

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the date caramels and after checking they are firm and set, skewer each square or use 2 forks to hold each one and dip into the melted chocolate, then place on a rack to dry.
    Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl.
    Sprinkle with sea salt as you work, waiting a few seconds so that the chocolate has started to harden a bit and the salt will adhere.
    Put the squares into the fridge for 30 minutes and once chocolate is set and crisp, enjoy your homemade Date Protein Caramels.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
