Healthier Cottage Cheese Fudge

This is a decadent, creamy, melt-in-your-mouth, healthy dessert or snack and absolutely delicious! It’s like eating your favorite chocolate bar but with more protein per bite, keeping you full and satisfied for longer.

Ingredients

  • 1 cup cottage cheese
  • 1 cup chocolate chips
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon coconut oil
  • 1 teaspoon vanilla extract

Topping Optional

  • 1/2 cup any nuts chopped

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting.
    Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    In a food processor, add cottage cheese, melted chocolate and coconut oil, honey and vanilla extract. Blend on high until smooth. Use a silicone scraper to scrape down the sides if necessary.
    Pour the fudge mixture into the lined pan and spread out evenly with a spatula or back of a spoon. If you enjoy a bit of crunch, you can also add the chopped nuts at this stage, either fold into the mixture or sprinkle on top.
    Place the dish in the refrigerator for at least 2 hours, or until the fudge is firm to the touch. Once set, remove the fudge from the refrigerator and cut it into small squares.
    Store leftovers in the freezer and allow to thaw slightly before serving.
