Ingredients
Base Dough
1 1/2cupsoat flour (oats blended to a flour) plus more if needed
1/2cupalmond flour
1/3cupcashew butter
1/4cupprotein or collagen peptides powder
1/4cuphoney or maple syrup
1/2cupany milk (start with ¼ cup, blend and see if more is needed)
1teaspoonvanilla extract
Caramel Filling
1 1/2cupsdates, soaked 30 minutes and drained
1/2cupany milk
1/4cupcashew butter
1teaspoonvanilla extract
1teaspooncinnamon
1/4teaspoonginger powder
Coconut Glaze
1/2cupcoconut butter, store bought or recipe below in notes
3tablespoonswater
3tablespoonscoconut oil
2tablespoonshoney or maple syrup
Instructions
Base Dough
In a food processor,combine oat flour, almond flour, cashew butter, protein powder, honey, milk, and vanilla extract and process until a thick dough forms.If dough seems too dry add more milk, or if it seems to sticky add more oat or almond flour.Scoop out the dough onto a sheet of parchment paper.Place another sheet of parchment paper on top of the dough.Roll out the dough into a large rectangle to prevent sticking to the counter or rolling pin.
Caramel Filling
In a food processor, combine dates, milk, almond butter, vanilla, cinnamon, and ginger and process until a sticky paste forms.Spread the prepared date mixture onto the rolled-out dough.Carefully roll up the dough into a log.Place the roll in the freezer for 45 minutes until firm.Once the roll is firm, slice it into 8 sliced rolls of your desired thickness and add the coconut glaze.
Coconut Glaze
Add all ingredients to a small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Drizzle on top of the sliced rolls and store in the freezer and thaw or warm up before eating.
