Ingredients

Base Crust

  • 1/2 cup protein or collagen peptides powder, plain or vanilla
  • 1/3 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1-3 tablespoons any milk (adjust as needed)
  • 1/3 cup chocolate chips
  • 1 teaspoon vanilla extract

Chocolate Filling

  • 1/3 cup almond flour
  • 3 tablespoons cocoa powder
  • 2 tablespoons honey or maple syrup
  • 2-3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

Base Crust

  • Line a muffin tin with 6 parchment paper liners or use a silicon muffin pan.
    In a mixing bowl,combine the protein powder, peanut butter, honey, vanilla extract mix until smooth.
    Gradually add 1-3 tablespoons of milk, adjusting as needed to achieve a thick, yet pliable consistency.
    Fold in the chocolate chips until evenly distributed.
    Assembly
    Divide the base crust mixture evenly among 6 muffin cups, pressing it down to form the base.
    Use your finger or a spoon to create a small indentation in the center of each cup for the chocolate filling.

Chocolate Filling

  • In a separate bowl, mix together the almond flour, cocoa powder, honey, vanilla extract, and 2-3 tablespoons of milk. the mixture should be thick but spoonable.
    Place a spoonful of the chocolate filling into the center of each base crust.
    Smooth the top if needed, then transfer the muffin tin to the freezer for a couple of hours, or until firm.
    Will keep in the fridge up to 1 week or freezer for up to 3 months.
