Ingredients

Brownie Base

  • 1 1/2 cups dates, soaked 30 minutes and drained
  • 1 cup almonds
  • 1 cup rolled oats
  • 1/3 cup almond or cashew (or any other nut or seed) butter
  • 1/3 cup cocoa powder
  • 1/3 cup milk of choice
  • 1/4 cup protein or collagen peptides powder
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • 1/4 cup rainbow sprinkles

Instructions

  • Add almonds and oats to a food processor and process until broken down and crumbly.
    Add dates, cashew butter, cocoa powder, milk, protein powder and vanilla extract and continue to process until well combined.
    If the dough seems too dry add more milk (or water) a tablespoon at a time or if the dough seems too wet, add a little more protein powder.
    Roll into 1-inch balls  (12-16). Or you can also make into bars or a silicon snack mold or a cupcake pan.
    Place in fridge to firm up for 1-2 hours.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the balls and after checking they are firm and set, working quickly, using two forks, dip one ball at a time into the bowl of melted chocolate until it is fully coated.
    Lift the ball from the bowl and let any excess chocolate drip off, then place it onto a tray lined with baking paper. Repeat with the remaining balls.
    Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. 
    Sprinkle with the sprinkles while the chocolate is still wet, then chill until chocolate has set.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
