1/2cupnatural peanut butter, almond butter or cashew butter
6Medjool dates, finely chopped
1scoopvanilla protein powder
2tablespoonshoney or maple syrup (optional)
1teaspoonvanilla extract
Pinch of sea salt
Chocolate Topping
1cupchocolate chips
1tablespooncoconut oil

Instructions
Line a 12-hole muffin pan with paper or silicone liners. Or use a silicon muffin pan.In a medium bowl, combine the Greek yogurt, nut butter, protein powder, honey (if using), vanilla and sea salt until smooth.Fold in the chopped dates.Divide the mixture evenly between the muffin liners.Freeze for 1–2 hours until firm.
Chocolate Topping
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Spoon a layer of melted chocolate over each frozen yogurt cup.Sprinkle with your favourite toppings before the chocolate sets.Return to the freezer for another 20–30 minutes until the chocolate is firm.Enjoy straight from the freezer or allow to sit at room temperature for 3–5 minutes before eating for a creamier texture.Store in an airtight container in the freezer for up to 3 months.
