1 1/2cupsGreek yogurt
1/2cupnatural peanut butter
1/3cupvanilla protein powder
2tablespoonsmaple syrup or honey
1teaspoonvanilla extract
Pinch of sea salt

Instructions
In a medium bowl, combine the Greek yogurt, peanut butter, protein powder, maple syrup, vanilla extract and sea salt.Whisk until completely smooth and creamy.Taste and adjust sweetness if desired.Line a mini muffin tin with paper or silicone liners, or use silicone candy moulds (makes 10-12 medium sized treats).Divide the mixture evenly between the moulds, smoothing the tops with the back of a spoon.If using, drizzle a little melted dark chocolate over each bite and sprinkle with chopped peanuts or mini chocolate chips.Place in the freezer for 3–4 hours, or until completely firm.Allow the bites to sit at room temperature for 3–5 minutes before eating for the creamiest texture.Store in an airtight container in the freezer for up to one month.Tips & VariationsSwap peanut butter for almond or cashew butter.Use coconut yogurt for a dairy-free version.Stir mini chocolate chips into the mixture before freezing.Add cinnamon for a subtle warmth.Swirl in raspberry or strawberry puree before freezing for a fruity twist.Sprinkle with toasted coconut for extra flavour and texture.
