Frozen Yogurt Birthday Cake Protein Bites

Ingredients

  • 2 cups thick Greek yogurt (or dairy-free yogurt)
  • 1 scoop vanilla or birthday cake protein powder
  • 1-2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional, for cake batter flavour)
  • 3 tablespoons sprinkles

Optional Add-Ins

  • White chocolate chips
  • Freeze-dried strawberries

White Chocolate Topping

  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil
  • Extra sprinkles

Instructions

  • Line a 12-cavity muffin pan with paper liners or use a silicon muffin pan.
    In a bowl, mix together the yogurt, protein powder, maple syrup, vanilla extract, and almond extract until smooth.
    Fold in the sprinkles and any optional add-ins.
    Spoon portions onto the prepared muffin pan.
    Freeze for 2–3 hours until firm.

White Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, spoon the melted white chocolate over each bite and sprinkle with extra sprinkles.
    Return to the freezer for 10 minutes to set.
    Serve straight from the freezer.
    Store in an airtight container in the freezer for up to 1 month.
    If fully frozen, let sit out for a few minutes to let soften for best texture.
