Frozen Yogurt Berry Protein Bites

Ingredients

  • 1 1/2 cups thick Greek yogurt (or dairy-free yogurt)
  • 1 cup berries – fresh or frozen- strawberries, blueberries, raspberries, blackberries or a mix, chopped if large
  • 1 cup granola
  • 1 scoop vanilla protein powder
  • 1-2 tablespoons maple syrup or honey (optional)
  • 1 teaspoon vanilla extract

Optional Toppings

  • Chopped nuts
  • Extra granola
  • Freeze-dried berry pieces
  • Hemp hearts
  • White or dark chocolate drizzle
  • Coconut flakes 
  • Fresh fruit or berries

Instructions

  • Line a 12-cup muffin pan with muffin liners. Or use a silicon muffin pan.
    In a bowl, combine Greek yogurt with vanilla protein powder and diced berries. You can add some sweetener here for a sweeter bite.
    Divide granola into lined muffin cups and cover with the mixture of yogurt. Top with your chosen toppings.
    Put into a freezer for 2-4 hours. Pop out each bite with a spoon and enjoy slightly defrosted 2-4 minutes later.
    Store in an airtight container in the freezer for up to 1 month. Let the bites sit at room temperature for 2–3 minutes before eating for the creamiest texture.
