Ingredients

  • 2 cups thick Greek-style yogurt (or dairy-free yogurt)
  • 1/4 cup almond butter
  • 1 scoop vanilla protein powder
  • 1-2 tablespoons honey or maple syrup (optional)
  • 1 teaspoon vanilla extract

Optional Toppings

  • Chocolate chips
  • Melted chocolate topping or drizzle
  • Chopped almonds
  • Coconut flakes
  • Sea salt flakes

Instructions

  • Line a 12-cavity muffin tin with silicone or paper liners. Or use a silicon snack mold.
    In a bowl, mix yogurt, almond butter, protein powder, sweetener (if using), and vanilla until smooth and creamy.
    Spoon the mixture evenly into the muffin cups.
    Add optional toppings if desired.
    Freeze for 3–4 hours, or until firm.
    Let sit at room temperature for 2–3 minutes before eating for best texture.
    Store in an airtight container in the freezer for up to 2 weeks.
