Frozen Blueberry Protein Clusters

Ingredients

  • 1 cup fresh or frozen (thawed) blueberries
  • 1 scoop vanilla or berry protein powder
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon vanilla extract

White Chocolate Coating

  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil

Optional Toppings

  • Freeze-dried blueberry powder
  • Crushed almonds
  • Coconut flakes

Instructions

  • Line a baking sheet with parchment paper.
    Add the blueberries to a bowl. Add the protein powder, chia seeds, maple syrup and vanilla. Use a fork to mash together until the mixture resembles a very thick jam (that you can mold into separate circle mounds).
    Drop a large spoonful (about 2 tablespoons full or bigger) of jam onto the parchment paper in an even circular mound/shape (6-8). Place the baking sheet in the freezer and freeze for 1-2 hours, or until hardened and set. 

White Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Working quickly, using two forks, dip one cluster at a time into the bowl of melted chocolate until it is fully coated. Lift the cluster from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining clusters.
    Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. 
    Repeat with remaining clusters. Place the baking sheet in the freezer again for another 10 minutes or until set.
    Serve and enjoy (you may have to thaw for 1-2 minutes if the clusters are too hard).   
    Store in freezer for up to 1 month.
