Ingredients

  • 2 large ripe bananas, sliced and frozen
  • 1 cup thick Greek-style yogurt or cottage cheese
  • 2 scoops vanilla or chocolate protein powder
  • 2 tablespoons cocoa powder
  • 1-2 tablespoons almond butter or peanut butter (optional, for richness)
  • 1 teaspoon vanilla extract

Instructions

  • Add frozen banana slices, yogurt or cottage cheese, protein powder, cocoa powder, nut butter (if using), and vanilla to a high-speed blender or food processor.
    Blend until completely smooth, stopping to scrape down the sides as needed. The mixture should be thick, creamy and similar to soft-serve ice cream.
    Spoon the banana cream evenly into 6 (or more) silicone muffin cups or a lined muffin tin. Smooth the tops with the back of a spoon.
    To Decorate
    1 fresh banana, sliced to place on top of each cup immediately before freezing, as shown in recipe image.
    Place the cups in the freezer for 1–2 hours, or until firm.
    Store in the freezer for up to 2 months
    Remove from the freezer 5–10 minutes before eating for best texture
    Keep in an airtight container to prevent freezer burn
    Easy Variations
    Peanut Butter Cup: Swirl extra peanut butter into the filling
    Mint Chocolate: Add ΒΌ teaspoon peppermint extract
    Crunchy Top: Sprinkle chopped nuts or cacao nibs onto the chocolate before it sets. Β
