Frosted Coconut & Lime Protein Bars

Ingredients

Bar Base

  • 1 cup almonds or walnuts or a mix
  • 1 cup rolled oats
  • 1/2 cup dates, soaked 30 minutes and drained
  • 1/2 cup desiccated coconut
  • 1/4 cup vanilla protein powder
  • 1 teaspoon vanilla extract

Yogurt Lime Protein Frosting

  • 1 1/2 cups thick Greek-style yogurt, plain or vanilla
  • 1/4 cup coconut oil, melted
  • 2 tablespoons vanilla protein powder
  • 2 tablespoons coconut flour
  • 2 tablespoons honey or maple syrup
  • 1 lime, juice and zest

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.  

Bar Base

  • Add all ingredients to a food processor and process until well combined and the mixture forms a dough.
    If mixture seems a little dry, add water or milk a tablespoon at a time or if too wet add more coconut flour or protein powder until dough comes together. Taste test and add more vanilla extract if you think it needs it.
    Scoop mixture out into the lined pan and smooth out evenly using a spatula or back of a spoon. Place in the fridge for 15 minutes while you make the yoghurt protein frosting.

Yogurt Lime Protein Frosting

  • Place coconut oil in a small dish and microwave with 10 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the coconut oil.
    Add melted coconut oil to a food processor along with all other ingredients and process until smooth. Should be a thick spreadable mixture.
    Add milk if too thick, coconut flour or protein powder if too thin.
    Taste test and add more lime or honey if you think it needs it.
    Spread on top of chilled slice and place pan back into the freezer for 30 minutes, or until the frosting has set.
    Remove pan from freezer and lift the parchment paper to remove the bars.
    Using a sharp knife, cut into 8-10 bars or more smaller squares.
    Store in an airtight container in freezer for up to three months
    Serve semi thawed with finely grated lime zest to finish. ✨
