Ingredients

  • 1 banana, sliced, frozen
  • 1 scoop vanilla protein powder
  • 1 cup crushed ice
  • 1/4 cup almond milk (or milk of choice)
  • 2 tablespoons Greek yogurt
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon xanthan gum (optional, for extra fluff)
  • Sweetener to taste, if needed

Optional Toppings

  • Fresh berries
  • Coconut flakes
  • Chopped nuts
  • Granola
  • White chocolate shavings
  • Hemp hearts
  • Cinnamon sprinkle

Instructions

  • Add the frozen banana, protein powder, almond milk, Greek yogurt and vanilla to a high-speed blender or food processor.
    Blend until mostly smooth.
    Add the crushed ice and xanthan gum, if using.
    Blend on high for 2–4 minutes until the mixture becomes thick, light and fluffy, stopping occasionally to scrape down the sides.
    Taste and add sweetener if desired.
    Spoon immediately into serving bowls.
    Add your favourite toppings and enjoy straight away.
    Serve immediately for maximum fluffiness.

    Xanthan gum is optional but creates a thicker, marshmallow-like texture.
    Freeze your banana when fully ripe for the best natural sweetness.
    If the mixture is too thick to blend, add a splash more milk - but only a little to maintain the fluffy consistency.
    Use crushed ice if possible - it blends more easily.
    Freeze your banana before hand for extra creaminess.
    Blend longer than you think you need. The volume increases gradually as more air is incorporated.
    Serve immediately, as protein fluff is at its fluffiest straight after blending.
    If using xanthan gum, only use a small amount - a little goes a very long way.
    Add a few frozen strawberries or blueberries for a fruity variation.
