Ingredients

  • 1/4 cup white chocolate chips
  • 2 tablespoons peanut (or any other nut) butter
  • 1/2 cup peanuts, roasted, roughly chopped
  • 1/2 cup desiccated coconut
  • 1 scoop vanilla protein powder
  • 1 1/2 teaspoons coconut oil, divided
  • 2 tablespoons dark chocolate chips

Instructions

  • Line a baking sheet with parchment paper or use a silicone baking mat. Set aside.
Place white chocolate chips, peanut butter and 1 teaspoon coconut oil in medium size dish and microwave with 20 second bursts stirring between each one until mostly melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
Once melted, add the peanuts and protein powder and stir until all the peanuts are coated.
Spoon 6-8 small mounds of the cluster mixture onto the lined baking sheet.
In a small microwave-safe bowl, add the dark chocolate chips and the ½ teaspoon of remaining coconut oil. Microwave in 15-second increments stirring in between until melted and smooth.
Drizzle the melted chocolate over the peanut clusters.
Freeze for 35-45 minutes until solid. Serve and enjoy!
Store in a ziplock bag or airtight container in the freezer or refrigerator.
This recipe makes a small batch, if you need more, just double or triple the recipe.
