Easy Healthy Protein Cookies No Bake Recipe

A great healthy snack for recharging after a workout or for a dessert. Packed with protein, easily my fave snack, ready in 20 minutes, and packed with all the nutrients you need to be full for hours.

Ingredients

  • 1/2 cup almond or coconut flour
  • 1/2 cup rolled oats
  • 1/2 cup desiccated coconut
  • 1/2 cup peanut (or any other nut or seed) butter
  • 1/4 cup protein or collagen peptides powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate chips
  • 2-4 tablespoons any milk if needed
  • 1 teaspoon vanilla extract

Instructions

  • In a medium mixing bowl, combine almond flour with oats, coconut, nut butter, protein powder, honey, and vanilla extract. Stir well until you get a soft dough, first with a fork and then using your hands. Fold in chocolate chips.
    If necessary, adjust the dough with more oat flour or with milk a tablespoon at a time until the dough comes together.
    Note: This depends on the protein powder used, some are more absorbent than others. Taste test and add more honey or vanilla extract if you think it needs it.
    Shape into 12 or more smaller cookies and place on a baking tray or plate lined with parchment paper.
    Refrigerate for at least 30 minutes before serving.
    These protein cookies needs to be stored in the fridge or freezer. Place cookies in an airtight container for up to 5 days in the fridge and up to 3 months in the freezer.
    To freeze, stack healthy no bake oat cookies with parchment paper in between, and place in airtight containers or freezer-safe zipper bags.
