Easy, Healthy Chocolate & Nut Protein Fudge

This fudge recipe delivers an unbelievable sweet, fudgy, coconut bite, followed by a delicate sweet-bitter hit of chocolate. With only 6 ingredients, it proves that delectable deliciousness doesn’t have to be complicated and time-consuming.

Ingredients

  • 3 cups chocolate chips choose dark, milk, white, semi-sweet chocolate chips according to your preference
  • 1 13.6 oz can coconut milk
  • 1/2 cup cashews, almonds ,pecans chopped
  • 1/3 cup tahini (sesame paste) or any nut or seed butter
  • 1/4 cup protein or collagen peptides powder
  • 1 teaspoon vanilla extract

Instructions

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Add chocolate chips, coconut milk and tahini in a sauce pan.
    Turn the saucepan on LOW heat. Whisk constantly until it melts completely and everything is well combined. Be sure to stir constantly and keep it melting at low heat, you do not want burnt chocolate! Mine took about 5 minutes to melt completely. As soon as it is melted remove from heat stir in the nuts, protein powder and vanilla extract.
    Pour the melted mixture into the lined baking dish. (You can use a wider dish, the fudge will just be thinner than pictured.)
    Spread the mixture evenly in the dish , sprinkle with flaky sea salt (optional, but highly recommend) and then place it in the freezer to harden for at least 2 hours. Once it hardens, slice into small pieces and ENJOY!
