Ingredients
Chocolate Protein Base
1cupalmond or oat flour (oats blended to a flour)
1/2cupalmond butter or peanut butter
1/2cupchocolate or vanilla protein powder
1/4cupmaple syrup or honey
2tablespoonscocoa powder
1teaspoonvanilla extract
Chocolate Topping
1cupdark chocolate chips
1tablespooncoconut oil
Flaky salt - optional
Toppings Or Add-Ins Optional
Chopped nuts
Shredded coconut
Cacao nibs
Freeze-dried fruit or berries
Chocolate chips or chunks
Instructions
In a mixing bowl, combine almond flour, almond butter, maple syrup, protein powder, cocoa powder and vanilla. Stir until a thick, smooth dough forms.Fold; in any optional add ins. Line a small tray or baking dish with parchment paper .Press the chocolate protein mixture evenly into a thin layer.
Chocolate Topping
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Pour melted chocolate over the protein base and spread evenly with a spatula.Sprinkle nuts, coconut, or cacao nibs or flaky salt over the top as desired.Place in the fridge for 30–40 minutes or freezer for15–20 minutes until firm.Once set, lift from the tray and break into 10 (more or less) rustic pieces.Store in an airtight container in the fridge for up to1 week or freezer for up to 3 months.Best enjoyed slightly chilled for the perfect snap-and-chew texture.
