Ingredients

Brownie Base

  • 1 cup oat flour
  • 1/2 cup almond butter or cashew butter
  • 1/3 cup chocolate protein powder
  • 1/4 cup cocoa powder or cacao powder
  • 1/4 cup maple syrup or honey
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons any milk
  • 1/4 cup finely chopped strawberries
  • 2 tablespoons desiccated coconut

Chocolate Topping

  • 3/4 cup dark chocolate chips
  • 1 teaspoon coconut oil

Optional Toppings

  • Fresh strawberry slices
  • Extra shredded coconut
  • Chocolate drizzle

Instructions

  • In a bowl, combine oat flour, chocolate protein powde and cocoa powder.
    Stir in almond butter, maple syrup, melted coconut oil, and vanilla extract.
    Add milk gradually until the mixture forms a thick brownie dough.
    Gently stir in chopped strawberries and shredded coconut.
    Firmly press the brownie mixture into the prepared pan and smooth the top.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Spread melted chocolate over the brownie layer and sprinkle with extra coconut or strawberries if desired.
    Refrigerate for 1–2 hours until firm.
    Slice into 10-12 bars and enjoy.
    Store in the fridge or freezer.
