Double Chocolate Frozen Protein Snack Balls

These ultra creamy double chocolate delights taste like little sinful bites of heaven, while being packed with protein and good stuff! This healthy dessert or snack is so simple and easy to make!

Ingredients

  • 1/2 cup almond or coconut flour
  • 1/2 cup plain Greek-style yogurt
  • 1/2 cup peanut (or any other nut or seed) butter
  • 2 scoops protein or collagen powder
  • 1/4 cup honey or maple syrup
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Toppings Optional

  • Chopped peanuts
  • Sprinkles

Instructions

  • Add all ingredients for snack balls in a medium bowl and mix well.
    Using a cookie scoop or spoon, scoop the batter in 1-2 tablespoon lots and roll in your hands to shape the ball. Place on a parchment paper lined tray. This recipe will make 6-8 snack balls depending on your preferred size.
    Place the tray in the freezer for 1-2 hours or until fully hardened.
    Once the snack balls are set, start melting the chocolate coating.
     

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Using one or two forks, dip each frozen snack ball into the melted chocolate turning around with the forks to fully coat.
    Or you can hold the ball with a fork over the melted chocolate and spoon it over, letting the excess drip back into the bowl. Place back on parchment paper tray and top with peanuts if using.
    Freeze for another 15 minutes or until chocolate coating is fully hardened.
    Store in the freezer and thaw when ready to eat, enjoy!
